Technology, quality and automation: Yuntero’s journey towards increasingly advanced wine production.
Founded on 20 March 1954 by 102 winegrowers from the Manzanares area, the Jesús del Perdón Cooperative – now Bodegas Yuntero – was established with the aim of promoting the region and its finest produce. With an initial capacity of 6 million kg of grapes, the winery grew rapidly, undergoing significant structural expansion and integrating new cooperatives as early as the 1960s.
Over the following decades, Yuntero established its identity by joining the Denominación de Origen La Mancha, developing a strong focus on exports and distinguishing itself through pioneering initiatives such as the production of the first organic wine in Castilla-La Mancha (1993) under the Mundo de Yuntero brand.
Today, it is one of the most well-established and dynamic cooperatives in the region, with over 700 member winegrowers and a vision focused on sustainability, quality and continuous innovation.
A decade-long partnership
The collaboration between Bodegas Yuntero and Omnia Technologies has evolved over time, supporting the winery’s growth through targeted technological investments and continuous improvements. The shared objective has always been to support increased production capacity, whilst ensuring high quality standards, operational continuity and efficiency throughout every stage of the process.
As Jorge Martínez, Technical Director at Bodegas Yuntero, points out: “We are expanding and improving all our winery processes. Ultimately, this is a process of constant renewal, because we have gone from being a winery that, up until ten years ago, processed around 50 million kilos of grapes, to reaching levels of 150, 160, perhaps even more, in record time. So, quite frankly, all our winery processes need to be expanded and improved. And so, well, we saw real potential for improvement in Omnia Technologies, thanks to the full industrial range they cover.”

Investment in technology: an integrated approach
Over the years, Yuntero has implemented a structured investment programme covering the entire production chain, adopting Omnia technologies in a gradual and strategic manner.
Between 2015 and 2020, the winery upgraded its pressing area by installing four Della Toffola pneumatic presses, which are essential for handling increasing volumes and ensuring controlled, high-quality extraction. In 2020, a Padovan Frigouniversal scraper was introduced, which is crucial for the thermal management of the must during the early stages of processing.
Since 2020, Yuntero has enhanced its filtration and clarification processes by introducing two Della Toffola CFKN cross-flow filters, supplemented by two Padovan Flottaflux continuous flotation units. In 2022, the process continued with the adoption of Permeare solutions for stabilisation and advanced filtration, whilst in 2023 the bottling area was further upgraded with the installation of a new Bertolaso filling machine and Innotec microfiltration systems, ensuring maximum microbiological safety.
Martínez recalls: “We started out many years ago with filtration, using the first cross-flow filters. Then came the presses, the grape reception facilities and the flotation units. Today, we clarify the must using continuous flotation.”
Continuous flotation: efficiency, quality and sustainability
A decisive step in the innovation process was the introduction of Padovan’s continuous flotation system, which enabled the winery to resolve a long-standing issue: the clarification of press lees.
“We had a problem processing press lees, which are very difficult to clarify. Continuous flotation is the technology that helped us solve this issue, working hand in hand with Padovan.”
Thanks to this technology, Yuntero is now able to clarify free-run must and lees at a rate of up to 1 million litres per day, delivering benefits in terms of quality, cost and operational efficiency. The results are also clear from an environmental perspective: “From an environmental point of view, for example in the field of filtration, we have found that these technologies use far less water and cleaning chemicals than other filtration systems.”
A look to the future
This collaboration continues today with the construction of a new fully automated pressing centre (CPA), equipped with three PFC480 presses and additional FLOTTAFLUX flotation units.
A strategic investment designed to further increase the capacity for receiving and processing grapes, ensuring total automation, greater efficiency and continuous process control.
The story of Yuntero demonstrates how a cooperative can evolve into a modern industrial enterprise without losing its connection to the local area and its founding values.
