Gelification

Overview

Solutions for accurate gelification of gelatine and other food products.

Gelification is a thermo-mechanical process that transforms liquid mixtures into structured, semi-solid products while maintaining integrity and stability.

Chemtech’s scraped surface heat exchangers  are ideal for the heating or cooling of shear-sensitive ingredients, ensuring uniform results and full process control.

The technology is adaptable to a wide range of gels and proteins, available in both oscillating and fixed configurations.

Key benefit

Benefits

Thanks to innovative technologies and high-quality materials, we offer systems that adapt to real production needs, improving yield and product quality.

01.
Precise thermal control
The system provides highly accurate temperature regulation, essential for activating and stabilizing gelling agents, while avoiding thermal degradation of delicate components.
02.
Uniform gel structure
Thanks to the scraping action and flow control, the system ensures even gelification, eliminating phase separation or texture inconsistencies—even at high production volumes.
03.
Versatile application
Suitable for various end-markets, the system effectively processes a wide range of gelling agents such as pectin, agar, starches, and gelatin.
